Ingredients

  • 8 oz angel hair pasta
  • 1 lb shrimp, peeled and deveined
  • 1 bunch asparagus, trimmed and cut into 2-inch pieces
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • ½ cup cherry tomatoes, halved
  • ¼ cup Parmesan cheese, grated
  • Salt and pepper to taste
  • Fresh parsley, chopped for garnish


Instructions

  1. Cook the angel hair pasta according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.
  3. Add the asparagus and cook for about 3-4 minutes until slightly tender.
  4. Add the shrimp and cook for another 3-4 minutes until they turn pink and are cooked through.
  5. Stir in the cherry tomatoes, add the cooked pasta, and season with salt and pepper. Mix everything well.
  6. Remove from heat and sprinkle with Parmesan cheese and chopped parsley before serving.

Notes

Serve with extra parsley or a squeeze of fresh lemon juice. Pairs well with a crisp green salad or garlic bread.
