Ingredients
- 8 oz angel hair pasta
- 1 lb shrimp, peeled and deveined
- 1 bunch asparagus, trimmed and cut into 2-inch pieces
- 2 tbsp olive oil
- 3 cloves garlic, minced
- ½ cup cherry tomatoes, halved
- ¼ cup Parmesan cheese, grated
- Salt and pepper to taste
- Fresh parsley, chopped for garnish
Instructions
- Cook the angel hair pasta according to package instructions. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.
- Add the asparagus and cook for about 3-4 minutes until slightly tender.
- Add the shrimp and cook for another 3-4 minutes until they turn pink and are cooked through.
- Stir in the cherry tomatoes, add the cooked pasta, and season with salt and pepper. Mix everything well.
- Remove from heat and sprinkle with Parmesan cheese and chopped parsley before serving.
Notes
Serve with extra parsley or a squeeze of fresh lemon juice. Pairs well with a crisp green salad or garlic bread.
