Ingredients
- 3 ripe bananas, mashed
- 1/3 cup melted butter
- 1 teaspoon baking soda
- A pinch of salt
- 3/4 cup sugar
- 1 large egg, beaten
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1/2 cup mini chocolate chips
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, mash the ripe bananas with a fork until smooth.
- Pour in the melted butter and mix it into the mashed bananas.
- Stir in the baking soda and salt.
- Add the sugar, beaten egg, and vanilla extract—mix well.
- Gradually incorporate the flour, mixing just until combined; avoid overmixing to keep the muffins airy.
- Gently fold in the mini chocolate chips.
- Pour the batter into a greased muffin tin, filling each cup until about two-thirds full.
- Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
