Description

A refreshing summer treat that combines classic banana pudding with the fun of popsicles, perfect for family gatherings or a sweet afternoon snack.


Ingredients

  • 2 cups non-fat Greek yogurt
  • ½ cup granulated sugar
  • 1 pack instant banana pudding mix
  • 2-3 crushed vanilla wafers or golden Oreo cookies


Instructions

  1. In a medium bowl, combine the non-fat Greek yogurt, granulated sugar, and banana pudding mix.
  2. Stir the mixture until it’s smooth and fully blended, ensuring there are no lumps.
  3. Scoop equal amounts of the blended mixture into your popsicle molds, filling them just about to the top.
  4. Sprinkle crushed vanilla wafers or golden Oreos on top of each mold for that extra crunch.
  5. Insert popsicle sticks or straws into each mold, anchoring them with the mixture.
  6. Freeze the molds for at least 4 hours, though letting them freeze overnight yields the best texture.

Notes

These popsicles can be stored in the freezer for up to a month. For a creamier texture, consider using full-fat Greek yogurt.
