Description
Deliciously moist muffins made with ripe bananas and topped with a crumbly streusel for added flavor and texture.
Ingredients
- 3 ripe bananas
- 1/3 cup melted butter
- 1 teaspoon baking soda
- Pinch of salt
- 3/4 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1/2 cup brown sugar
- 1/3 cup all-purpose flour (for streusel)
- 1 teaspoon cinnamon
- 2 tablespoons cold butter (for streusel)
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large mixing bowl, mash the ripe bananas until you achieve a smooth consistency.
- Mix in the melted butter until well incorporated.
- Stir in the baking soda and a pinch of salt, followed by the granulated sugar, egg, and vanilla extract until fully combined.
- Gently fold in the all-purpose flour, being careful not to overmix.
- In a separate bowl, combine the brown sugar, additional flour, cinnamon, and cold butter. Mix until crumbly to form the streusel topping.
- Fill the muffin cups about two-thirds full with the banana batter, then sprinkle the streusel topping generously over each muffin.
- Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
- Allow to cool slightly before transferring to a wire rack.
Notes
Keep your bananas speckled and almost black for maximum sweetness. Avoid overmixing the batter for light, fluffy muffins.
