Description

Deliciously moist muffins made with ripe bananas and topped with a crumbly streusel for added flavor and texture.


Ingredients

  • 3 ripe bananas
  • 1/3 cup melted butter
  • 1 teaspoon baking soda
  • Pinch of salt
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/3 cup all-purpose flour (for streusel)
  • 1 teaspoon cinnamon
  • 2 tablespoons cold butter (for streusel)


Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large mixing bowl, mash the ripe bananas until you achieve a smooth consistency.
  3. Mix in the melted butter until well incorporated.
  4. Stir in the baking soda and a pinch of salt, followed by the granulated sugar, egg, and vanilla extract until fully combined.
  5. Gently fold in the all-purpose flour, being careful not to overmix.
  6. In a separate bowl, combine the brown sugar, additional flour, cinnamon, and cold butter. Mix until crumbly to form the streusel topping.
  7. Fill the muffin cups about two-thirds full with the banana batter, then sprinkle the streusel topping generously over each muffin.
  8. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  9. Allow to cool slightly before transferring to a wire rack.

Notes

Keep your bananas speckled and almost black for maximum sweetness. Avoid overmixing the batter for light, fluffy muffins.
