Description

A beginner-friendly sourdough bread recipe using the High Starter Method for a tangy flavor and chewy texture.


Ingredients

  • 2 cups active sourdough starter (400 grams)
  • 3 cups sifted all-purpose flour (360 grams)
  • 1 cup warm water (240 grams)
  • 1.5 teaspoons salt (≈9 grams)


Instructions

  1. In a large mixing bowl, add 2 cups of active sourdough starter.
  2. Whisk in 1 cup of warm water until well combined.
  3. Gradually mix in 3 cups of sifted flour and 1.5 teaspoons of salt until the dough takes on a wet, biscuit-like consistency.
  4. Cover the bowl with a damp kitchen towel and let it rest in a warm place for 2 hours or in a warm oven for 1 hour.
  5. Begin the first stretch and fold: pick up one side of the dough and fold it over itself. Rotate the bowl and repeat for a total of 4-6 times.
  6. Cover and let rise for an additional 45 minutes until doubled in size.
  7. Repeat the stretch and fold process two more times, allowing the dough to rise each time.
  8. After the fourth fold, shape the dough into a round loaf and place it seam-side up in a floured towel or proofing basket.
  9. Cover and refrigerate for 4 to 8 hours.
  10. Preheat your oven to 400°F (204°C) with a Dutch oven inside.
  11. Turn out the chilled dough onto parchment paper and score the top with a sharp knife.
  12. Lift the dough into the hot Dutch oven using the parchment paper and cover it with the lid.
  13. Bake for 25 minutes covered. Then, remove the lid and bake for an additional 25 minutes until golden brown.
  14. Let cool, slice, and enjoy your homemade sourdough!

Notes

Ensure your sourdough starter is active for best results. Experiment with different types of flour for varied textures.
