Description

A comforting and delicious slow cooker casserole featuring shredded chicken, enchilada sauce, and cheese, perfect for busy evenings.


Ingredients

  • 2 pounds shredded chicken
  • 2 cups enchilada sauce
  • 2 cups shredded cheese
  • 4 cups tortilla strips
  • 1 cup chopped onion
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • Salt and pepper to taste


Instructions

  1. Layer shredded chicken in the bottom of the slow cooker.
  2. Pour the enchilada sauce over the chicken.
  3. Add chopped onion, tortilla strips, and spices.
  4. Cover with shredded cheese.
  5. Cook on low for 6-8 hours or high for 3-4 hours.
  6. Serve warm, garnished with cilantro or sour cream if desired.
