Ingredients
- 2 lbs chicken thighs (bone-in or boneless)
- 1/2 cup bourbon
- 1/2 cup low-sodium soy sauce
- 3 cloves minced garlic
- 1 tablespoon fresh ginger (or ginger paste)
- 1/4 cup brown sugar
- 1 tablespoon sesame oil
- Scallions (for garnish)
Instructions
- In your slow cooker, add the soy sauce, bourbon, minced garlic, fresh ginger, and brown sugar. Mix well to combine.
- Place the chicken thighs in the slow cooker, ensuring each piece is well-coated with the sauce.
- Cover and cook on low for 4-6 hours, or until the chicken is fork-tender.
- Once the chicken is cooked, shred it directly in the sauce using two forks. Mix everything together to soak the chicken in the delicious sauce.
- Serve over rice and garnish with sliced scallions for a fresh touch.
Notes
For extra depth, marinate the chicken in the sauce for an hour before cooking. For a thicker sauce, remove the lid during the last hour of cooking.
