Description

A warm, crisp wrap oozing with melty cheese and garlicky chicken, perfect for weeknight dinners or busy lunches.


Ingredients

  • 2 cups cooked chicken, shredded (leftover or rotisserie)
  • 1 cup shredded mozzarella cheese
  • 1/2 cup cream cheese, softened
  • 1/4 cup garlic, minced (about 34 cloves)
  • 1/4 cup fresh parsley, chopped
  • 4 large tortillas (burrito size)
  • 1 tablespoon olive oil
  • Salt and pepper to taste


Instructions

  1. Combine the shredded chicken, mozzarella, softened cream cheese, minced garlic, and chopped parsley in a large bowl.
  2. Stir until evenly mixed and season with salt and pepper.
  3. Lay the tortillas flat on a clean surface and divide the chicken mixture into four equal portions.
  4. Fold the short sides in toward the center, then roll tightly from one long side to the other.
  5. Heat 1 tablespoon olive oil in a large skillet over medium heat.
  6. Place the wraps seam-side down in the pan and cook until the bottom is golden brown, about 3–4 minutes.
  7. Flip carefully and cook the other side until evenly golden and the cheese is melted, another 3–4 minutes.
  8. Remove from the skillet and let rest for one minute before slicing and serving warm.

Notes

For low-carb, use large low-carb tortillas or crisped lettuce leaves.
