Description

A comforting blend of classic banana bread and sweet cinnamon roll flavors, perfect for breakfast or as a snack.


Ingredients

  • 3 overripe bananas (mashed, about 1 1/2 cups)
  • 1/2 cup melted vegan butter (or regular butter)
  • 1/2 cup maple syrup (can substitute honey if not strictly vegan)
  • 1 cup unsweetened almond or oat milk (soy or coconut milk are also options)
  • 1 tsp pure vanilla extract
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 tsp fine salt
  • 2 cups all-purpose flour (or a 1:1 gluten-free flour blend)
  • 1 cup old-fashioned rolled oats (quick oats can be used)
  • 1/4 cup packed light brown sugar (for swirl)
  • 1 cup powdered sugar (for frosting)
  • 8 oz softened vegan cream cheese (or regular cream cheese)
  • 1/4 cup melted vegan butter (for frosting)


Instructions

  1. Preheat your oven to 350°F (175°C) and grease and line a 9×5-inch loaf pan with parchment paper.
  2. In a large bowl, mash the bananas until mostly smooth.
  3. Stir the melted vegan butter into the mashed bananas, then add in the maple syrup, almond milk, and vanilla. Whisk until well combined.
  4. In a separate bowl, whisk together the flour, oats, baking powder, baking soda, cinnamon, and salt.
  5. Gently fold the dry mixture into the wet mix until just combined. Be careful not to overmix!
  6. For the cinnamon swirl, combine the brown sugar and cinnamon in a small bowl.
  7. Spoon half of the batter into the prepared pan and sprinkle with half of the cinnamon-sugar mixture. Add the remaining batter, then top with the rest of the cinnamon-sugar. Swirl lightly with a knife to create a marbled effect.
  8. Bake for 50-65 minutes or until a toothpick inserted into the center comes out clean.
  9. Allow it to cool in the pan for 10-15 minutes before lifting it out to cool completely on a wire rack.
  10. For the frosting, beat together the softened vegan cream cheese and melted vegan butter until smooth. Gradually incorporate powdered sugar until you’ve achieved your desired consistency.
  11. Spread the frosting over the cooled loaf, slice it up, and enjoy!

Notes

For a rich flavor, use well overripe bananas. Store in an airtight container for up to three days or refrigerate for a week.
