Description
A comforting blend of classic banana bread and sweet cinnamon roll flavors, perfect for breakfast or as a snack.
Ingredients
- 3 overripe bananas (mashed, about 1 1/2 cups)
- 1/2 cup melted vegan butter (or regular butter)
- 1/2 cup maple syrup (can substitute honey if not strictly vegan)
- 1 cup unsweetened almond or oat milk (soy or coconut milk are also options)
- 1 tsp pure vanilla extract
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp ground cinnamon
- 1/2 tsp fine salt
- 2 cups all-purpose flour (or a 1:1 gluten-free flour blend)
- 1 cup old-fashioned rolled oats (quick oats can be used)
- 1/4 cup packed light brown sugar (for swirl)
- 1 cup powdered sugar (for frosting)
- 8 oz softened vegan cream cheese (or regular cream cheese)
- 1/4 cup melted vegan butter (for frosting)
Instructions
- Preheat your oven to 350°F (175°C) and grease and line a 9×5-inch loaf pan with parchment paper.
- In a large bowl, mash the bananas until mostly smooth.
- Stir the melted vegan butter into the mashed bananas, then add in the maple syrup, almond milk, and vanilla. Whisk until well combined.
- In a separate bowl, whisk together the flour, oats, baking powder, baking soda, cinnamon, and salt.
- Gently fold the dry mixture into the wet mix until just combined. Be careful not to overmix!
- For the cinnamon swirl, combine the brown sugar and cinnamon in a small bowl.
- Spoon half of the batter into the prepared pan and sprinkle with half of the cinnamon-sugar mixture. Add the remaining batter, then top with the rest of the cinnamon-sugar. Swirl lightly with a knife to create a marbled effect.
- Bake for 50-65 minutes or until a toothpick inserted into the center comes out clean.
- Allow it to cool in the pan for 10-15 minutes before lifting it out to cool completely on a wire rack.
- For the frosting, beat together the softened vegan cream cheese and melted vegan butter until smooth. Gradually incorporate powdered sugar until you’ve achieved your desired consistency.
- Spread the frosting over the cooled loaf, slice it up, and enjoy!
Notes
For a rich flavor, use well overripe bananas. Store in an airtight container for up to three days or refrigerate for a week.
