Description

A delightful blend of ripe bananas and cinnamon sugar, perfect for breakfast or a snack.


Ingredients

  • 3 ripe bananas
  • 1/3 cup melted butter
  • 1 teaspoon baking soda
  • A pinch of salt
  • 3/4 cup sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 tablespoon ground cinnamon
  • 1/4 cup sugar (for the swirl)


Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 4×8 inch loaf pan.
  2. Mash ripe bananas in a mixing bowl until smooth and creamy.
  3. Stir in the melted butter until well combined.
  4. Add baking soda and a pinch of salt, mixing well.
  5. Incorporate sugar, egg, and vanilla extract, stirring until mixed.
  6. Gently mix in flour until just incorporated.
  7. In a small bowl, blend ground cinnamon with 1/4 cup of sugar.
  8. Pour half of the batter into the prepared loaf pan, sprinkle with half of the cinnamon-sugar mixture.
  9. Layer the remaining batter, finishing with the rest of the cinnamon-sugar mixture.
  10. Gently swirl through the batter with a knife.
  11. Bake for 60-65 minutes, or until a toothpick comes out clean.
  12. Let cool in the pan for a few minutes before transferring to a wire rack to cool completely.

Notes

For a healthier option, substitute half of the all-purpose flour with whole wheat flour.
