Description
A delightful blend of ripe bananas and cinnamon sugar, perfect for breakfast or a snack.
Ingredients
- 3 ripe bananas
- 1/3 cup melted butter
- 1 teaspoon baking soda
- A pinch of salt
- 3/4 cup sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 tablespoon ground cinnamon
- 1/4 cup sugar (for the swirl)
Instructions
- Preheat your oven to 350°F (175°C) and grease a 4×8 inch loaf pan.
- Mash ripe bananas in a mixing bowl until smooth and creamy.
- Stir in the melted butter until well combined.
- Add baking soda and a pinch of salt, mixing well.
- Incorporate sugar, egg, and vanilla extract, stirring until mixed.
- Gently mix in flour until just incorporated.
- In a small bowl, blend ground cinnamon with 1/4 cup of sugar.
- Pour half of the batter into the prepared loaf pan, sprinkle with half of the cinnamon-sugar mixture.
- Layer the remaining batter, finishing with the rest of the cinnamon-sugar mixture.
- Gently swirl through the batter with a knife.
- Bake for 60-65 minutes, or until a toothpick comes out clean.
- Let cool in the pan for a few minutes before transferring to a wire rack to cool completely.
Notes
For a healthier option, substitute half of the all-purpose flour with whole wheat flour.
