Description

Light, chewy cottage cheese bagels made with just three pantry ingredients. Perfect for quick breakfasts or snacks.


Ingredients

  • 1 cup self-rising flour (plus extra for dusting)
  • 1 cup full-fat cottage cheese
  • 1 large egg, beaten (for egg wash)
  • Toppings: sesame seeds, everything bagel seasoning, shredded asiago, poppy seeds, coarse salt


Instructions

  1. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Pulse the cottage cheese in a food processor until mostly smooth.
  3. In a mixing bowl, combine the blended cottage cheese with self-rising flour and stir until a soft dough forms.
  4. Turn the dough onto a lightly floured surface and knead briefly for about 1 minute until smooth.
  5. Divide the dough into 4 even pieces and shape each into a ring.
  6. Arrange the bagels on a baking sheet, brush with the beaten egg, and sprinkle with toppings.
  7. Bake for 18–22 minutes until golden brown.
  8. Cool on a wire rack for at least 10 minutes before slicing.

Notes

Blending the cottage cheese smooth is key for a consistent texture. Store baked bagels in the fridge for up to 3–4 days or freeze for up to 2 months.
