Description

Protein-packed, savory egg bites made with cottage cheese and bacon, perfect for breakfast or as a quick snack.


Ingredients

  • 1 cup cottage cheese
  • 6 large eggs
  • 1/2 cup cooked bacon, crumbled
  • Salt, to taste (start with 1/4 teaspoon)
  • Black pepper, to taste
  • Optional add-ins (up to 1/2 cup total): chopped spinach, diced bell pepper, sliced scallions, shredded cheese, or chopped fresh herbs


Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 12-cup muffin tin or use silicone cups.
  2. In a medium bowl, lightly whisk the eggs until combined. Add the cottage cheese and whisk just until mixed.
  3. Stir in crumbled bacon and any optional veggies or herbs. Season with salt and pepper.
  4. Spoon the mixture into the muffin cups, filling each about 3/4 full.
  5. Bake for 20–25 minutes, until centers are set and tops are lightly browned.
  6. Let cool for 5 minutes before serving warm, or cool completely to store.

Notes

For a smoother texture, blend cottage cheese and eggs briefly. Store in an airtight container for up to 4–5 days or freeze for up to 2 months.
