Description
Easy and quick cottage cheese flatbreads that are soft, versatile, and perfect for pairing with soups or as a side.
Ingredients
- 1 cup cottage cheese
- 1 1/2 cups all-purpose flour, plus extra for dusting
- Optional add-ins: 1/3 cup grated parmesan or cheddar, chopped fresh herbs (parsley, chives, or dill), a pinch of smoked paprika or garlic powder, or 1–2 tbsp sugar and a pinch of cinnamon
- Salt and pepper to taste
Instructions
- Combine cottage cheese and flour in a mixing bowl until a shaggy dough forms.
- If using, stir in cheese or herbs; season with salt and pepper.
- Bring the dough together with your hands. Add more flour if sticky.
- Knead on a floured surface for 1–2 minutes until smooth.
- Divide the dough into 6–8 pieces and roll each into a round about 1/4 inch thick.
- Heat a skillet over medium heat and cook each flatbread for 2–3 minutes per side until golden.
- Wrap cooked flatbreads to keep warm and serve immediately.

Dairy-free or vegan options available. Store in an airtight container for up to 3 days or freeze for up to 2 months.
