Description

Delightful bite-sized pieces of chicken coated in a rich, buttery sauce infused with garlic and spices, perfect for quick dinners or gatherings.


Ingredients

  • 1.5 lbs boneless skinless chicken breasts or thighs, cut into bite-sized pieces
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1 tbsp olive oil
  • 4 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 1 tbsp lemon juice
  • 1 tsp Dijon mustard
  • 1/2 tsp red pepper flakes (adjust to taste)
  • 2 tbsp chopped fresh parsley


Instructions

  1. In a bowl, combine the chicken pieces with salt, black pepper, smoked paprika, and garlic powder. Toss well to ensure even coating.
  2. Heat olive oil in a large skillet over medium-high heat. Working in batches, add the chicken to the skillet and cook until golden brown and fully cooked through. Set the chicken aside.
  3. In the same skillet, melt the unsalted butter over low heat. Stir in the minced garlic, lemon juice, Dijon mustard, and red pepper flakes. Allow to cook for about 1 minute until the garlic is fragrant.
  4. Return the cooked chicken to the skillet and toss it in the cowboy butter until fully coated. Let it simmer for an additional minute.
  5. Garnish with freshly chopped parsley and serve immediately.

Notes

For a fresher taste, use freshly minced garlic. Customize the spice level by adjusting the red pepper flakes.
