Ingredients
- 1.5 lbs boneless skinless chicken breasts or thighs, cut into bite-sized pieces
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp smoked paprika
- 1/2 tsp garlic powder
- 1 tbsp olive oil
- 4 tbsp unsalted butter
- 4 cloves garlic, minced
- 1 tbsp lemon juice
- 1 tsp Dijon mustard
- 1/2 tsp red pepper flakes (adjust to taste)
- 2 tbsp chopped fresh parsley
Instructions
- In a bowl, combine the chicken pieces with salt, black pepper, smoked paprika, and garlic powder. Toss well to ensure even coating.
- Heat olive oil in a large skillet over medium-high heat. Working in batches, add the chicken to the skillet and cook until golden brown and fully cooked through. Set the chicken aside.
- In the same skillet, melt the unsalted butter over low heat. Stir in the minced garlic, lemon juice, Dijon mustard, and red pepper flakes. Allow to cook for about 1 minute until the garlic is fragrant.
- Return the cooked chicken to the skillet and toss it in the cowboy butter until fully coated. Let it simmer for an additional minute.
- Garnish with freshly chopped parsley and serve immediately.
Notes
For a fresher taste, use freshly minced garlic. Customize the spice level by adjusting the red pepper flakes.
