Description

A rich and creamy bisque made with sweet crab meat and tender shrimp, perfect for cozy evenings or festive gatherings.


Ingredients

  • 1 lb crab meat
  • 1 lb shrimp, peeled and deveined
  • 4 cups seafood stock
  • 1 cup heavy cream
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 cup celery, diced
  • 1 cup carrots, diced
  • 1/2 cup white wine
  • 2 tbsp olive oil
  • 1 tsp thyme
  • Salt and pepper to taste
  • Chopped parsley for garnish


Instructions

  1. In a large pot, heat the olive oil over medium heat. Sauté the diced onion, minced garlic, celery, and carrots until softened, about 5-7 minutes.
  2. Pour in the white wine and scrape the bottom of the pot to deglaze. Continue cooking until the wine has reduced by half, approximately 3-4 minutes.
  3. Add the seafood stock alongside thyme, salt, and pepper, and bring everything to a gentle simmer.
  4. Stir in the crab meat and shrimp, allowing them to cook until the shrimp turns pink and is opaque, about 3-4 minutes.
  5. Reduce the heat and mix in the heavy cream, stirring gently until incorporated.
  6. Allow the bisque to simmer for an additional 5 minutes, adjusting the seasoning as needed.
  7. Serve the bisque hot, garnished with freshly chopped parsley for a pop of color and flavor.

Notes

For the best flavor, use fresh seafood if possible. Consider sautéing some diced fennel with the vegetables or adding a splash of lemon juice before serving.
