Description
A luxurious yet quick dinner featuring cheese tortellini, seared steak, and a rich garlic cream sauce.
Ingredients
- 20 oz cheese tortellini
- 1 lb steak (sirloin or ribeye)
- Salt
- Black pepper
- Garlic powder
- Smoked paprika
- 2 tbsp olive oil
- 4 tbsp butter
- 5 cloves garlic, minced
- 1 cup heavy cream
- 3/4 cup whole milk
- 1 1/4 cups Parmesan, shredded
- Parsley, chopped (for garnish)
- Red pepper flakes (optional)
Instructions
- Cook the tortellini according to package instructions. Drain and set aside, reserving a small cup of pasta water.
- Pat the steak dry and season with salt, black pepper, garlic powder, and smoked paprika.
- Heat a large skillet over medium-high heat, add olive oil and sear the steak for 4–5 minutes per side for medium-rare. Remove and let it rest.
- In the same skillet, reduce heat to medium, add butter and minced garlic, sautéing until fragrant.
- Pour in heavy cream and whole milk, stirring gently and bringing to a gentle simmer.
- Add Parmesan gradually, stirring until the sauce thickens.
- Slice the rested steak thinly against the grain and add it along with the cooked tortellini to the sauce. Toss to coat.
- Season with additional salt, cracked pepper, and red pepper flakes to taste. Garnish with chopped parsley and serve hot.
Notes
For a lighter dish, substitute half of the heavy cream with Greek yogurt. Storage tip: refrigerate leftovers for up to 3 days.
