Description

A luxurious yet quick dinner featuring cheese tortellini, seared steak, and a rich garlic cream sauce.


Ingredients

  • 20 oz cheese tortellini
  • 1 lb steak (sirloin or ribeye)
  • Salt
  • Black pepper
  • Garlic powder
  • Smoked paprika
  • 2 tbsp olive oil
  • 4 tbsp butter
  • 5 cloves garlic, minced
  • 1 cup heavy cream
  • 3/4 cup whole milk
  • 1 1/4 cups Parmesan, shredded
  • Parsley, chopped (for garnish)
  • Red pepper flakes (optional)


Instructions

  1. Cook the tortellini according to package instructions. Drain and set aside, reserving a small cup of pasta water.
  2. Pat the steak dry and season with salt, black pepper, garlic powder, and smoked paprika.
  3. Heat a large skillet over medium-high heat, add olive oil and sear the steak for 4–5 minutes per side for medium-rare. Remove and let it rest.
  4. In the same skillet, reduce heat to medium, add butter and minced garlic, sautéing until fragrant.
  5. Pour in heavy cream and whole milk, stirring gently and bringing to a gentle simmer.
  6. Add Parmesan gradually, stirring until the sauce thickens.
  7. Slice the rested steak thinly against the grain and add it along with the cooked tortellini to the sauce. Toss to coat.
  8. Season with additional salt, cracked pepper, and red pepper flakes to taste. Garnish with chopped parsley and serve hot.

Notes

For a lighter dish, substitute half of the heavy cream with Greek yogurt. Storage tip: refrigerate leftovers for up to 3 days.
