Description

A rich and creamy chicken chili that’s easy to prepare in your slow cooker, perfect for busy weekdays or gatherings.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 packet of ranch seasoning mix
  • 1 block (8 oz) cream cheese
  • 1 cup chicken broth
  • Optional toppings: shredded cheese, sour cream, cilantro, avocado


Instructions

  1. Place the chicken breasts at the bottom of your crock pot.
  2. Add the black beans, corn, diced tomatoes, and ranch seasoning evenly over the chicken.
  3. Pour the chicken broth into the crock pot, covering all ingredients.
  4. Place the cream cheese on top. Do not stir.
  5. Cover and cook on low for 6-8 hours or high for 4 hours.
  6. When done, shred the chicken with two forks directly in the pot.
  7. Stir everything together to combine, ensuring the cream cheese is melted and incorporated.
  8. Serve warm and garnish with your favorite toppings.

Notes

For richer flavor, consider browning the chicken before adding it to the slow cooker. Adjust spices to fit your taste preferences.
