A rich and creamy chicken chili that’s easy to prepare in your slow cooker, perfect for busy weekdays or gatherings.
Ingredients
- 2 boneless, skinless chicken breasts
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (10 oz) diced tomatoes with green chilies
- 1 packet of ranch seasoning mix
- 1 block (8 oz) cream cheese
- 1 cup chicken broth
- Optional toppings: shredded cheese, sour cream, cilantro, avocado
Instructions
- Place the chicken breasts at the bottom of your crock pot.
- Add the black beans, corn, diced tomatoes, and ranch seasoning evenly over the chicken.
- Pour the chicken broth into the crock pot, covering all ingredients.
- Place the cream cheese on top. Do not stir.
- Cover and cook on low for 6-8 hours or high for 4 hours.
- When done, shred the chicken with two forks directly in the pot.
- Stir everything together to combine, ensuring the cream cheese is melted and incorporated.
- Serve warm and garnish with your favorite toppings.
Notes
For richer flavor, consider browning the chicken before adding it to the slow cooker. Adjust spices to fit your taste preferences.
