Description
A comforting, creamy skillet dish featuring pan-seared chicken breasts, fresh spinach, and a rich Parmesan-cream sauce, ready in about 30 minutes.
Ingredients
- 2 skinless, boneless chicken breasts (about 1 to 1¼ lb total)
- Salt and freshly ground black pepper, to taste
- 1–2 tablespoons olive oil
- 2 tablespoons butter
- 2 cloves garlic, minced (about 1 teaspoon)
- 2 cups fresh spinach (packed)
- 1 cup heavy cream
- ½ cup grated Parmesan cheese (freshly grated preferred)
Instructions
- Prepare the chicken: Pat breasts dry and season both sides with salt and pepper.
- Heat the pan: Warm a large skillet over medium heat. Add olive oil and butter.
- Sear the chicken: Add the breasts and cook undisturbed until golden, about 6–7 minutes. Flip and cook another 6–7 minutes until cooked through.
- Rest the chicken: Remove and tent loosely with foil.
- Sauté the garlic: In the same skillet, reduce heat and add minced garlic, cooking until fragrant.
- Wilt the spinach: Add spinach and toss until just wilted.
- Build the sauce: Pour in heavy cream, bring to simmer, stir in Parmesan, and simmer until thickened.
- Finish: Return chicken to the skillet, spoon sauce over, and simmer briefly to combine flavors.
Notes
For a lighter sauce, use half-and-half instead of heavy cream. Freshly grated Parmesan gives better melt and flavor.
