Description
A creamy, comforting one-skillet meal featuring chicken, gnocchi, cream cheese, cheddar, and spinach, ready in about 30 minutes.
Ingredients
- 3–4 boneless, skinless chicken breasts (about 1 lb), cut into bite-sized pieces
- 16 oz fresh or frozen gnocchi
- 8 oz cream cheese, softened slightly
- 2 cups low-sodium chicken broth
- 4 cups fresh spinach, packed
- 1 cup shredded cheddar cheese
- ½ cup crispy bacon bits
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt and freshly ground black pepper, to taste
Instructions
- Prep everything first: cut chicken into bite-size pieces, shred cheese, and measure liquids.
- Heat 1 tablespoon of oil in a large skillet over medium-high heat.
- Add the chicken in a single layer; cook until golden and cooked through, about 5–7 minutes.
- Reduce heat to low; add cream cheese and chicken broth, stirring until smooth.
- Stir in the gnocchi and fresh spinach; cover and simmer for 5–7 minutes until tender.
- Remove lid and mix in cheddar and bacon; cook until cheese melts and evenly coated.
- Serve hot straight from the skillet.
Notes
For lighter options, use turkey bacon and gluten-free gnocchi. Leftovers make great sliders.
