Description

A quick and delicious shrimp dish featuring a creamy garlic butter sauce served over rice.


Ingredients

  • 1 lb large shrimp, peeled and deveined
  • Salt and pepper, to taste
  • 2 tbsp olive oil
  • 3 tbsp unsalted butter
  • 5 cloves garlic, minced
  • 1 tsp paprika
  • ½ tsp red pepper flakes (optional)
  • ½ cup chicken broth
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • 1 tbsp lemon juice
  • 2 tbsp chopped parsley (optional, for garnish)
  • 1 cup long-grain white rice
  • 2 cups water or chicken broth
  • Salt, to taste
  • 1 tbsp butter for rice


Instructions

  1. In a medium saucepan, combine rice, water or broth, salt, and 1 tablespoon of butter. Bring to a boil, reduce heat to low, cover, and let simmer for 18-20 minutes until tender and liquid is absorbed.
  2. Season shrimp with salt, pepper, and paprika. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat, add shrimp, and cook for 1-2 minutes per side until pink and opaque. Remove and set aside.
  3. In the same skillet, reduce heat to medium, add 3 tablespoons of butter and minced garlic, sauté for 30 seconds until fragrant.
  4. Pour in chicken broth and simmer for 2 minutes, scraping browned bits from the skillet.
  5. Stir in heavy cream and grated Parmesan, simmering for 3-5 minutes until slightly thickened.
  6. Add lemon juice and red pepper flakes (if using), then return cooked shrimp to skillet, tossing to coat and heat through.
  7. Serve over warm rice, garnished with chopped parsley if desired.

Notes

For a lighter version, substitute heavy cream with a non-dairy alternative. Pair with a side salad or crusty bread to enhance your meal.
