A quick, creamy shrimp dish flavored with garlic, lemon, and Parmesan, served over fluffy rice—perfect for busy weeknights.
Ingredients
- 1 lb large shrimp, peeled and deveined
- Salt and black pepper, to taste
- 2 tbsp olive oil
- 3 tbsp unsalted butter
- 5 cloves garlic, minced
- 1 tsp paprika
- ½ tsp red pepper flakes (optional)
- ½ cup chicken broth or white wine
- 1 cup heavy cream
- ½ cup grated Parmesan cheese
- 1 tbsp lemon juice
- 2 tbsp chopped parsley (optional)
- 1 cup long-grain white rice
- 2 cups water or chicken broth (for cooking rice)
- 1 tbsp butter (for the rice)
Instructions
- Cook the rice: In a medium saucepan, combine 1 cup rice, 2 cups water or broth, a pinch of salt, and 1 tbsp butter. Bring to a boil, reduce heat to low, cover, and simmer for 18–20 minutes. Fluff with a fork and keep covered.
- Season the shrimp: Pat the shrimp dry with paper towels, then season with salt, black pepper, and paprika.
- Sear the shrimp: Heat 2 tbsp olive oil in a large skillet over medium-high heat. Add shrimp in a single layer and cook for 1–2 minutes per side until pink and opaque. Do not overcook. Remove shrimp and set aside.
- Sauté the garlic: Lower heat to medium, add 3 tbsp butter to the same skillet, and once melted, add minced garlic, sautéing for about 30 seconds until fragrant.
- Deglaze the pan: Pour in ½ cup chicken broth or white wine, scraping up browned bits. Simmer for 2 minutes to reduce slightly.
- Build the cream sauce: Stir in 1 cup heavy cream and ½ cup grated Parmesan, simmering gently for 3–5 minutes until thickened. Stir often.
- Finish the shrimp: Stir in 1 tbsp lemon juice and ½ tsp red pepper flakes (if using). Return shrimp to skillet and toss to coat, warming until heated through.
- Serve: Spoon the shrimp and sauce over warm rice and garnish with parsley if desired.
Notes
For a lighter sauce, substitute light cream and cornstarch. Freshly grated Parmesan is recommended for best melting.
