Description

A quick and comforting skillet chicken dish with a silky garlic Parmesan cream sauce, perfect for weeknight dinners or special occasions.


Ingredients

  • 1.5 lbs boneless, skinless chicken breasts, halved horizontally
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese (for the sauce)
  • 1/4 cup grated Parmesan cheese (for topping)
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt (plus more to taste)
  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped


Instructions

  1. Lightly season both sides of each chicken breast with salt and black pepper. If pieces are uneven, gently pound to about 1/2 inch thickness.
  2. Heat a large skillet over medium-high and add olive oil and butter. Let the butter foam.
  3. Sear the chicken for 4–5 minutes per side until golden and cooked through. Transfer to a plate.
  4. Reduce heat to medium and add minced garlic. Sauté until fragrant, about 30–60 seconds.
  5. Pour in chicken broth and scrape up browned bits. Let simmer for 1–2 minutes.
  6. Stir in heavy cream and Italian seasoning, bringing to a gentle simmer.
  7. Whisk in Parmesan cheese until the sauce is smooth, about 1–2 minutes.
  8. Return chicken to the skillet and spoon sauce over it. Top with remaining Parmesan.
  9. Cover and cook on low for 1–2 minutes to warm through.
  10. Garnish with parsley and serve immediately over starch of choice.

Notes

Use half-and-half for a lighter sauce. Boneless skinless thighs also work well. Freshly grated Parmesan is recommended for best texture.
