Ingredients

  • 1 pound Italian sausage
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup small pasta (ditalini or any small pasta)
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)


Instructions

  1. In a large pot, cook the Italian sausage over medium heat until well browned. Drain any excess fat.
  2. Add the diced onion and minced garlic to the pot and sauté until softened, about 3-5 minutes.
  3. Pour in the chicken broth, stir to combine, and bring to a gentle boil.
  4. Stir in the ditalini pasta and cook until al dente, about 6-8 minutes.
  5. Lower the heat, mix in the heavy cream and grated Parmesan cheese, stirring until combined.
  6. Season with salt and pepper to taste and serve hot, garnished with fresh parsley if desired.
