Description
Tender chicken thighs slow-cooked in a sweet and slightly boozy bourbon glaze, perfect for meal prep or impressing guests.
Ingredients
- 2–3 pounds boneless, skinless chicken thighs
- 1/2 cup bourbon
- 1/2 cup soy sauce (or tamari for gluten-free)
- 4 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1/4 cup brown sugar (light or dark)
- 1/2 cup chicken broth
- 2 green onions, thinly sliced (for garnish)
- Sesame seeds (optional, for garnish)
Instructions
- In a bowl, whisk together soy sauce, bourbon, minced garlic, grated ginger, and brown sugar until sugar dissolves.
- Place chicken thighs in the slow cooker in a single layer and turn to coat in the sauce.
- Pour chicken broth around the edges of the pot.
- Cover and cook on low for 6–8 hours or high for 3–4 hours until chicken is tender and easily shredded.
- Remove any large pieces of fat, then shred the chicken in the pot.
- Stir in the shredded chicken to coat with the sauce.
- Serve hot over rice or noodles and garnish with green onions and sesame seeds.
Notes
Browning the chicken before cooking can add depth to the flavor. Adjust sweetness by controlling the amount of brown sugar used.
