Description

A hearty dish featuring tender chicken and pasta with bold Cajun flavors, made easy in a slow cooker.


Ingredients

  • 1 lb chicken breast (fresh or thawed)
  • 1 cup pasta (penne or fusilli)
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 onion, chopped
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 2 tablespoons Cajun seasoning
  • Salt and pepper to taste
  • Parmesan cheese for serving
  • Green onions for garnish


Instructions

  1. Place the chicken breast in the bottom of your crock pot.
  2. Add the chopped onion, diced bell pepper, and minced garlic over the chicken.
  3. Pour in the chicken broth and heavy cream to create a creamy base.
  4. Sprinkle the Cajun seasoning evenly over the mixture.
  5. Season with salt and pepper to your liking.
  6. Cover the crock pot and cook on low for 6-7 hours or high for 3-4 hours, until the chicken is thoroughly cooked and tender.
  7. About 30 minutes before serving, stir in the pasta and let it cook until al dente.
  8. Serve with a generous sprinkle of Parmesan cheese and garnish with sliced green onions.

Notes

Leftover pasta can be stored in an airtight container in the refrigerator for up to 3 days. For longer storage, freeze in portions for up to 2 months.
