A hearty dish featuring tender chicken and pasta with bold Cajun flavors, made easy in a slow cooker.
Ingredients
- 1 lb chicken breast (fresh or thawed)
- 1 cup pasta (penne or fusilli)
- 1 cup heavy cream
- 1 cup chicken broth
- 1 onion, chopped
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 2 tablespoons Cajun seasoning
- Salt and pepper to taste
- Parmesan cheese for serving
- Green onions for garnish
Instructions
- Place the chicken breast in the bottom of your crock pot.
- Add the chopped onion, diced bell pepper, and minced garlic over the chicken.
- Pour in the chicken broth and heavy cream to create a creamy base.
- Sprinkle the Cajun seasoning evenly over the mixture.
- Season with salt and pepper to your liking.
- Cover the crock pot and cook on low for 6-7 hours or high for 3-4 hours, until the chicken is thoroughly cooked and tender.
- About 30 minutes before serving, stir in the pasta and let it cook until al dente.
- Serve with a generous sprinkle of Parmesan cheese and garnish with sliced green onions.
Notes
Leftover pasta can be stored in an airtight container in the refrigerator for up to 3 days. For longer storage, freeze in portions for up to 2 months.
