Description
A hands-off slow-cooker pasta dish featuring tender chicken, bell peppers, and a creamy Cajun sauce, perfect for weeknights and gatherings.
Ingredients
- 1 1/2 pounds boneless, skinless chicken breasts
- 2 tablespoons Cajun seasoning
- 1 teaspoon paprika
- 1/2 teaspoon garlic powder
- Salt and black pepper to taste
- 1 tablespoon olive oil (optional)
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1/2 yellow onion, sliced
- 3 cups low-sodium chicken broth
- 8 ounces cream cheese, cubed and softened
- 1 cup shredded Parmesan cheese
- 12 ounces penne or rotini pasta
- Fresh parsley, chopped (for garnish)
- Extra grated Parmesan for serving
- Crushed red pepper flakes (optional)
Instructions
- Rub chicken breasts with Cajun seasoning, paprika, garlic powder, salt, and pepper; let rest for 15–20 minutes.
- If desired, sear chicken in olive oil for 1–2 minutes per side.
- Place seasoned chicken in the slow cooker; top with sliced peppers and onions. Pour chicken broth over the top.
- Cover and cook on low for 6–7 hours or high for 3–4 hours until chicken is tender.
- Shred the chicken and return it to the slow cooker.
- Add cream cheese and Parmesan; stir until smooth and creamy.
- Cook an additional 10–15 minutes on low to meld the flavors.
- Meanwhile, boil pasta until al dente; reserve 1/2 cup cooking water, then drain.
- Fold drained pasta into the slow cooker; adjust consistency with reserved pasta water or additional broth if necessary.
- Taste and adjust seasoning, then serve hot garnished with parsley and extra Parmesan.
Notes
Great served with a side salad or garlic bread. Can be customized with different pasta shapes and spice levels.
