Description

A comforting slow-cooked dish featuring tender chicken with Cajun spices, creamy cheese, and hearty pasta.


Ingredients

  • 1 1/2 pounds boneless, skinless chicken breasts
  • 2 tablespoons Cajun seasoning
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • Salt and pepper, to taste
  • 1 tablespoon olive oil
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1/2 yellow onion, sliced
  • 3 cups low-sodium chicken broth
  • 8 ounces cream cheese, cubed
  • 1 cup shredded Parmesan cheese
  • 12 ounces penne or rotini pasta
  • Fresh parsley for garnish
  • Extra Parmesan cheese and crushed red pepper flakes for serving


Instructions

  1. Rub the chicken breasts with Cajun seasoning, paprika, garlic powder, salt, and pepper. Optionally, marinate for 15-20 minutes.
  2. Place the seasoned chicken in your slow cooker and add sliced bell peppers, onion, and chicken broth.
  3. Cover and cook on low for 6-7 hours or high for 3-4 hours, or until the chicken is tender.
  4. Once cooked, remove the chicken, shred it, and return it to the pot.
  5. Stir in the cream cheese and Parmesan until melted and creamy. Cook on low for an additional 10-15 minutes.
  6. Meanwhile, cook your pasta according to package directions until al dente. Drain and set aside.
  7. Stir the cooked pasta into the slow cooker, ensuring everything is well mixed.

Notes

Garnish with fresh parsley and serve with extra Parmesan or crushed red pepper flakes. This dish can be stored in the refrigerator for up to 3-4 days or frozen for up to 2 months.
