Ingredients
- 4 boneless skinless chicken breasts
- 1 tablespoon olive oil
- Salt & black pepper to taste
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- 1/2 cup chicken broth
- 1 cup heavy cream
- 3/4 cup grated Parmesan cheese
- 1/2 cup chopped sun-dried tomatoes (in oil, drained)
- 2 cloves garlic, minced
- 1/2 teaspoon crushed red pepper flakes (optional)
- Fresh chopped parsley (for garnish)
Instructions
- Prep the Chicken: Pat the chicken breasts dry and season both sides with salt, black pepper, garlic powder, and Italian seasoning.
- Sear the Chicken (Optional): Heat olive oil in a skillet over medium-high heat and sear the chicken until golden brown on each side.
- Combine Ingredients: In the Crock Pot, combine chicken broth, heavy cream, grated Parmesan, sun-dried tomatoes, minced garlic, and crushed red pepper flakes. Stir well.
- Add the Chicken: Place the seasoned chicken into the mixture, ensuring it’s coated well.
- Cook: Cover and cook on low for 3.5 to 4 hours, or until chicken reaches an internal temperature of 165°F.
- Garnish and Serve: Garnish with fresh chopped parsley and serve hot.
