Description

A comforting dish featuring tender chicken breasts simmered in a creamy, Parmesan-infused sauce with sun-dried tomatoes.

Ingredients

  • 4 boneless skinless chicken breasts
  • 1 tablespoon olive oil
  • Salt & black pepper to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1/2 cup chicken broth
  • 1 cup heavy cream
  • 3/4 cup grated Parmesan cheese
  • 1/2 cup chopped sun-dried tomatoes (in oil, drained)
  • 2 cloves garlic, minced
  • 1/2 teaspoon crushed red pepper flakes (optional)
  • Fresh chopped parsley (for garnish)

Instructions

  1. Prep the Chicken: Pat the chicken breasts dry and season both sides with salt, black pepper, garlic powder, and Italian seasoning.
  2. Sear the Chicken (Optional): Heat olive oil in a skillet over medium-high heat and sear the chicken until golden brown on each side.
  3. Combine Ingredients: In the Crock Pot, combine chicken broth, heavy cream, grated Parmesan, sun-dried tomatoes, minced garlic, and crushed red pepper flakes. Stir well.
  4. Add the Chicken: Place the seasoned chicken into the mixture, ensuring it’s coated well.
  5. Cook: Cover and cook on low for 3.5 to 4 hours, or until chicken reaches an internal temperature of 165°F.
  6. Garnish and Serve: Garnish with fresh chopped parsley and serve hot.

Notes

For added depth of flavor, consider searing the chicken or adding a splash of white wine. This dish can be served over rice, mashed potatoes, or pasta.
