Description

A cozy, satisfying slow-cooked dish with tender chicken, cheesy tortellini, and fresh spinach in a rich marinara sauce.


Ingredients

  • 1 ½ lbs chicken breast (about 4 medium breasts)
  • 2 cups marinara sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion granules
  • 1 teaspoon Italian seasoning mix
  • ½ teaspoon paprika
  • ¼ teaspoon red chili flakes
  • 1 ½ cups chicken broth
  • 1 lb cheese tortellini
  • 1 cup mozzarella cheese, shredded
  • ½ cup heavy cream
  • 2 cups baby spinach
  • ⅓ cup Parmesan cheese, grated


Instructions

  1. Spray your slow cooker with olive oil.
  2. Place the chicken breasts in a single layer inside the cooker.
  3. Pour the marinara sauce and sprinkle the spices over the chicken.
  4. Cover and set the slow cooker to LOW for about four hours.
  5. Once cooked, shred the chicken using two forks and return the meat to the cooker, mixing it well with the sauce.
  6. Add the tortellini, mozzarella, and heavy cream, stirring until everything is well combined.
  7. Cook on LOW for an additional 30 minutes.
  8. Stir in the spinach and let it cook for another 10 minutes.
  9. Finish by adding Parmesan cheese. Taste and adjust the seasoning as desired.

Notes

For a gluten-free version, use gluten-free tortellini. Can add vegetables like bell peppers or zucchini for extra nutrition.
