Description
This easy, protein-rich crustless quiche is creamy from cottage cheese, bright with spinach and bell pepper, and topped with shredded cheddar. Perfect for meal prep or a crowd.
Ingredients
- 4 large eggs
- 1 cup cottage cheese
- 1 cup fresh spinach, chopped
- 1/2 cup bell pepper, diced
- 1/2 cup onion, diced
- 1 cup shredded cheddar cheese
- Salt and pepper to taste
- Cooking spray or oil for greasing
Instructions
- Preheat oven to 375°F (190°C). Grease a 9-inch pie dish or oven-safe skillet.
- In a large bowl, whisk the eggs and cottage cheese until smooth and slightly frothy.
- Fold in spinach, bell pepper, onion, and shredded cheese. Season with salt and pepper.
- Pour the mixture into the prepared dish and smooth the top with a spatula.
- Bake for 30–35 minutes until the edges are golden and a toothpick inserted near the center comes out mostly clean.
- Remove from oven and let cool for 5–10 minutes before slicing. Serve warm or at room temperature.
Notes
Store leftovers in an airtight container for up to 4 days. Can be frozen for up to 2 months.
