Ingredients

  • 8 bone-in, skin-on chicken thighs
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon smoked paprika (optional)


Instructions

  1. Preheat the oven to 425°F. Line a rimmed baking sheet with parchment for easy cleanup.
  2. Pat the chicken thighs very dry with paper towels.
  3. Drizzle the olive oil over the thighs and rub it over both sides to coat evenly.
  4. Combine the garlic powder, onion powder, paprika, dried thyme, dried rosemary, salt, black pepper, and smoked paprika in a small bowl. Mix well.
  5. Sprinkle the spice blend generously over both sides of each thigh, pressing lightly so the rub adheres.
  6. Arrange the thighs skin-side up on the prepared sheet, spaced so they aren’t touching.
  7. Roast on the middle rack for 35–40 minutes, checking the internal temperature at 165°F.
  8. Remove from oven and let the thighs rest for 5 minutes before serving.

Notes

For best results, dry the skin thoroughly and avoid overcrowding the pan. Seasoning the chicken at least 30 minutes ahead enhances flavor.
