A quick and decadent dish featuring shrimp simmered in a rich, creamy sauce with sun-dried tomatoes and fresh spinach.
Ingredients
- 1 lb shrimp (peeled and deveined)
- 3 tablespoons olive oil
- 2 cloves garlic (minced)
- 1 cup heavy cream
- 1/2 cup sun-dried tomatoes (chopped)
- 2 cups fresh spinach
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Grated Parmesan cheese for serving
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add the shrimp and season with salt and pepper. Cook until pink and opaque, about 2-3 minutes per side. Remove the shrimp and set aside.
- In the same skillet, add minced garlic and sauté until fragrant, around 30 seconds.
- Pour in the heavy cream and bring to a gentle simmer. Stir in the sun-dried tomatoes and Italian seasoning.
- Add the fresh spinach and stir until wilted.
- Return the shrimp to the skillet and combine well. Cook for an additional 2-3 minutes to heat through.
- Serve with a sprinkle of grated Parmesan cheese on top.
Notes
Substitute heavy cream with half-and-half for a lighter version; add fresh herbs for a personalized flavor.
