Description

A quick and decadent dish featuring shrimp simmered in a rich, creamy sauce with sun-dried tomatoes and fresh spinach.


Ingredients

  • 1 lb shrimp (peeled and deveined)
  • 3 tablespoons olive oil
  • 2 cloves garlic (minced)
  • 1 cup heavy cream
  • 1/2 cup sun-dried tomatoes (chopped)
  • 2 cups fresh spinach
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Grated Parmesan cheese for serving


Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add the shrimp and season with salt and pepper. Cook until pink and opaque, about 2-3 minutes per side. Remove the shrimp and set aside.
  3. In the same skillet, add minced garlic and sauté until fragrant, around 30 seconds.
  4. Pour in the heavy cream and bring to a gentle simmer. Stir in the sun-dried tomatoes and Italian seasoning.
  5. Add the fresh spinach and stir until wilted.
  6. Return the shrimp to the skillet and combine well. Cook for an additional 2-3 minutes to heat through.
  7. Serve with a sprinkle of grated Parmesan cheese on top.

Notes

Substitute heavy cream with half-and-half for a lighter version; add fresh herbs for a personalized flavor.
