Description
A crisp, everyday salad combining mixed greens, cherry tomatoes, cucumber, and red onion dressed in a simple olive oil-balsamic vinaigrette.
Ingredients
- 4–6 cups mixed salad greens (spring mix, baby spinach, or arugula)
- 1–2 cups cherry tomatoes, halved
- 1 medium cucumber, sliced into rounds or half-moons
- 1/4 to 1/2 small red onion, thinly sliced
- 3 tablespoons extra-virgin olive oil
- 1 tablespoon balsamic vinegar
- Salt and freshly ground black pepper, to taste
Instructions
- Wash and dry the salad greens thoroughly.
- Halve the cherry tomatoes and place them in a large mixing bowl.
- Slice the cucumber and add to the bowl.
- Thinly slice the red onion and add them to the bowl.
- In a small bowl, whisk together olive oil, balsamic vinegar, salt, and pepper until emulsified.
- Drizzle the dressing over the salad just before serving and toss gently.
- Serve immediately on chilled plates.
Notes
Best eaten immediately. Store leftovers in an airtight container; keep dressing separate.
