Description

A simple, one-skillet meal featuring juicy boneless chicken breasts seared in garlic butter with crispy golden potatoes.


Ingredients

  • 4 boneless chicken breasts (about 1.251.5 lbs total)
  • 4 medium Yukon Gold or red potatoes, washed and cubed
  • 4 tablespoons unsalted butter, divided
  • 4 cloves garlic, minced
  • 1 teaspoon dried thyme (or 1 tablespoon fresh, chopped)
  • 1 teaspoon paprika
  • Salt and freshly ground black pepper, to taste
  • Fresh parsley, chopped, for garnish


Instructions

  1. Pat the chicken breasts dry with paper towels and season both sides generously with salt, pepper, thyme, and paprika.
  2. Heat a large skillet over medium heat and add 2 tablespoons of the butter, letting it melt. Then add the minced garlic and cook for 30–60 seconds until fragrant.
  3. Add the seasoned chicken to the skillet and cook for 5–7 minutes per side until golden and the chicken reaches an internal temperature of 165°F (74°C). Remove from pan and tent with foil to rest.
  4. In the same skillet, add the remaining 2 tablespoons of butter and the cubed potatoes. Toss to coat and sauté for 15–20 minutes until golden and fork-tender.
  5. Return the chicken to the skillet, nestling it among the potatoes. Heat together for 2–3 minutes, allowing the flavors to combine.
  6. Sprinkle with chopped parsley and serve immediately.

Notes

Chicken thighs can be used instead; cook longer until they reach a safe internal temperature. For a dairy-free version, swap butter for olive oil.
