Description

A comforting and flavorful garlic butter chicken meal made in a slow cooker, featuring tender chicken and vegetables for an easy weeknight dinner.


Ingredients

  • 2 lbs boneless, skinless chicken breasts or thighs
  • 1.5 lbs baby red potatoes, quartered
  • 1 lb whole carrots, peeled and cut into chunks
  • 6 cloves garlic, minced
  • 1/2 cup unsalted butter, melted
  • 1 tbsp Italian seasoning
  • 1 tsp salt
  • 1/2 tsp freshly ground black pepper
  • 1/2 cup chicken broth
  • 1 tbsp chopped fresh parsley (optional, for garnish)


Instructions

  1. Prep: Quarter the baby reds and chop the carrots so they cook evenly. Pat the chicken dry with paper towels.
  2. Layer veg and chicken: Place the potatoes and carrots in the bottom of the slow cooker. Lay the chicken on top.
  3. Make the garlic butter sauce: Whisk together melted butter, minced garlic, Italian seasoning, salt, pepper, and chicken broth in a bowl.
  4. Coat: Pour the sauce evenly over the chicken and vegetables.
  5. Cook: Cover and cook on LOW for 6–7 hours or on HIGH for 3–4 hours until the chicken reaches 165°F.
  6. Finish: Adjust seasoning with salt or pepper and sprinkle with parsley before serving.
