Description

A quick and comforting skillet dinner featuring tender chicken, store-bought potato gnocchi, and a creamy garlic sauce.


Ingredients

  • 1 pound boneless, skinless chicken breast, cut into 1-inch chunks
  • 1 package (16 oz) store-bought potato gnocchi
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup fresh spinach (optional)
  • Salt and freshly ground black pepper, to taste
  • Freshly grated Parmesan cheese, for serving


Instructions

  1. Heat a large skillet over medium-high heat.
  2. Add the olive oil and let it shimmer.
  3. Pat the chicken dry and season with salt and pepper.
  4. Arrange the chicken in a single layer in the hot skillet.
  5. Cook undisturbed until browned on one side, about 2–3 minutes.
  6. Turn and cook another 2–4 minutes until just cooked through.
  7. Remove chicken to a plate.
  8. Reduce heat to medium and add the minced garlic.
  9. Sauté for 30–60 seconds until fragrant.
  10. Pour in the chicken broth and scrape up the browned bits.
  11. Stir in the heavy cream and bring to a gentle simmer.
  12. Return the chicken to the skillet and add the gnocchi.
  13. Cook according to the gnocchi package directions until they are tender.
  14. Stir in the spinach and cook just until wilted, about 1 minute.
  15. Serve immediately with a sprinkle of Parmesan.

Notes

For a lighter sauce, substitute half-and-half plus a tablespoon of flour. To make it dairy-free, use coconut milk and omit Parmesan.
