Description
A hearty meal featuring juicy grilled chicken, crisp-tender broccoli, and a luscious creamy garlic sauce, perfect for busy weeknights.
Ingredients
- 2 boneless, skinless chicken breasts
- 2 cups broccoli florets
- 1 cup cooked grains (rice, quinoa, or couscous)
- 3 cloves garlic, minced
- 1/2 cup heavy cream
- 2 tablespoons butter
- 2 tablespoons olive oil
- Salt and black pepper, to taste
- 1 tablespoon lemon juice
- Optional: Fresh parsley or chives for garnish
Instructions
- Preheat your grill to medium-high heat. Brush chicken breasts with olive oil and season generously with salt and pepper. Grill each breast for about 6-7 minutes per side, or until it reaches an internal temperature of 165°F. Set aside to rest before slicing.
- While the chicken grills, toss broccoli florets with olive oil, lemon juice, and a pinch of salt. Spread on a baking sheet and roast at 400°F for 15-20 minutes until crisp-tender.
- Prepare your chosen grains according to the package instructions, then fluff with a fork and keep warm.
- In a medium saucepan, melt butter over medium heat, add minced garlic, and sauté for about a minute. Stir in heavy cream, seasoning with salt and pepper, and let simmer until thickened slightly, about 3-5 minutes.
- Assemble each serving by layering grains, sliced grilled chicken, roasted broccoli, and drizzling with the creamy garlic sauce. Top with fresh herbs if desired.
Notes
For added flavor, marinate the chicken in olive oil, lemon juice, and garlic for 30 minutes before grilling. You can prepare the sauce ahead of time and store it in the fridge for up to 2 days.
