Description

A light and refreshing salad featuring juicy grilled chicken, crisp greens, and fresh vegetables, all topped with a zesty vinaigrette.


Ingredients

  • 2 chicken breasts
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Mixed salad greens (such as lettuce, spinach, and arugula)
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, sliced
  • 1 bell pepper, sliced
  • 1/4 red onion, thinly sliced
  • 1/4 cup feta cheese (optional)
  • Balsamic vinaigrette or dressing of choice


Instructions

  1. Preheat your grill to medium-high heat.
  2. Brush the chicken breasts with olive oil and season generously with salt and pepper.
  3. Grill the chicken for 6-7 minutes on each side or until fully cooked and no longer pink in the center.
  4. Once cooked, remove from the grill and let the chicken rest for a few minutes before slicing.
  5. In a large bowl, combine mixed salad greens, cherry tomatoes, cucumber, bell pepper, and red onion.
  6. Add the sliced grilled chicken on top of the salad.
  7. If desired, sprinkle with feta cheese for a creamy finish.
  8. Drizzle with balsamic vinaigrette or your favorite dressing, and toss gently to combine.
  9. Serve immediately and enjoy!

Notes

For a lighter version, omit the feta and use your favorite dressing.
