A healthy twist on classic creamy pasta, featuring lean chicken, whole wheat pasta, and a creamy sauce made with Greek yogurt and Parmesan.
Ingredients
- 8 oz whole wheat pasta
- 1 lb lean chicken breast, diced
- 1 cup Greek yogurt
- 1 cup grated Parmesan cheese
- 4 cloves garlic, minced
- 2 tbsp olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Cook the whole wheat pasta according to the package instructions. Drain and set aside.
- In a large skillet over medium heat, add olive oil. Add diced chicken breast and cook for 5-7 minutes until browned and fully cooked.
- Add minced garlic and stir for another 1-2 minutes until fragrant.
- Reduce heat, then stir in Greek yogurt and grated Parmesan cheese until combined. Season with salt and pepper.
- Add cooked pasta to the skillet and toss to coat in the sauce.
- Serve hot, garnished with fresh parsley.
Notes
For a lighter option, use non-fat or low-fat Greek yogurt.
