Description

Delightful homemade strawberry popsicles made with fresh strawberries and coconut water, perfect for summer.


Ingredients

  • 2 cups fresh strawberries, washed and hulled, roughly chopped
  • 1/4 cup sugar (or adjust to taste)
  • 1 cup coconut water or fruit juice (orange, apple, or white grape)
  • 1 tablespoon lemon juice


Instructions

  1. Rinse the strawberries under cold water, hull, and chop them roughly.
  2. Place chopped strawberries in a blender with sugar, coconut water (or juice), and lemon juice.
  3. Blend until smooth, adjusting sweetness as necessary.
  4. Pour the mixture into popsicle molds, leaving 1/4 inch at the top.
  5. Insert sticks and freeze for at least 4 to 6 hours, preferably overnight.
  6. To release, run molds under warm water for 10–20 seconds and gently pull the sticks.

Notes

For added creativity, layer different fruit purees in the molds or substitute sweeteners as desired.
