Description
Delightful homemade strawberry popsicles made with fresh strawberries and coconut water, perfect for summer.
Ingredients
- 2 cups fresh strawberries, washed and hulled, roughly chopped
- 1/4 cup sugar (or adjust to taste)
- 1 cup coconut water or fruit juice (orange, apple, or white grape)
- 1 tablespoon lemon juice
Instructions
- Rinse the strawberries under cold water, hull, and chop them roughly.
- Place chopped strawberries in a blender with sugar, coconut water (or juice), and lemon juice.
- Blend until smooth, adjusting sweetness as necessary.
- Pour the mixture into popsicle molds, leaving 1/4 inch at the top.
- Insert sticks and freeze for at least 4 to 6 hours, preferably overnight.
- To release, run molds under warm water for 10–20 seconds and gently pull the sticks.
Notes
For added creativity, layer different fruit purees in the molds or substitute sweeteners as desired.
