Description

A vibrant and delicious meal combining sweet and savory flavors with tender shrimp, colorful vegetables, and a rich honey garlic sauce over rice or quinoa.

Ingredients

  • 1 lb large shrimp, peeled and deveined
  • ¼ cup honey
  • ¼ cup soy sauce (or tamari for gluten-free)
  • 3 cloves garlic, minced
  • 1 tsp fresh ginger, grated
  • 1 tbsp olive oil
  • 2 cups cooked white rice, brown rice, or quinoa
  • 1 cup broccoli florets, steamed or sautéed
  • ¼ cup green onions, finely sliced
  • Optional: sesame seeds or crushed red pepper flakes for garnish

Instructions

  1. In a small bowl, combine honey, soy sauce, minced garlic, and grated ginger. Whisk until smooth.
  2. Heat olive oil in a large skillet over medium heat. Place shrimp in a single layer and cook for 2-3 minutes on each side until pink and curled.
  3. Pour the honey garlic sauce into the skillet. Let it bubble and thicken for about 2 minutes.
  4. While the shrimp cooks, steam or sauté the broccoli until bright green and tender.
  5. Serve rice or quinoa in bowls, top with shrimp and sauce, and add broccoli. Garnish with green onions and optional toppings.

Notes

Make the sauce in advance for quicker assembly. Customize veggies with your favorites.
