Description

Delicious Korean BBQ meatballs with a sweet-spicy umami punch, perfect for weeknight dinners or parties.


Ingredients

  • 1 lb ground beef (80/20 or leaner)
  • 2 cloves garlic, minced
  • 2 tablespoons sesame oil (toasted if preferred)
  • 1/4 cup soy sauce
  • 1/4 cup gochujang (Korean chili paste)
  • 2 tablespoons brown sugar
  • 1 egg
  • 1/2 cup breadcrumbs
  • Salt and pepper to taste
  • Chopped green onions for garnish


Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a bowl, combine ground beef, garlic, sesame oil, soy sauce, gochujang, brown sugar, egg, breadcrumbs, salt, and pepper.
  3. Mix gently but thoroughly, ensuring not to overwork the meat.
  4. Shape mixture into 1-inch meatballs and place on the prepared baking sheet.
  5. Bake for 15–20 minutes, turning halfway, until meatballs reach an internal temperature of 160°F (71°C).
  6. Let rest for 2–3 minutes; garnish with green onions and serve hot.

Notes

Serve with rice, in slider buns, or on skewers for easy appetizers. Can be made gluten-free with tamari and gluten-free breadcrumbs.
