Description

A quick weeknight dinner featuring zesty flavors and comforting textures, this Lemon Butter Shrimp Pasta is simple yet impressive.

Ingredients

  • 8 oz linguine or spaghetti
  • 1 lb large shrimp, peeled and deveined
  • 4 tbsp unsalted butter
  • 3 cloves garlic, minced
  • 1 lemon, zested and juiced
  • 1/4 cup chicken broth
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)
  • Grated Parmesan cheese (optional)

Instructions

  1. Cook the linguine or spaghetti according to the package instructions. Drain and set aside.
  2. In a large skillet, melt the butter over medium heat.
  3. Add the minced garlic and sauté until fragrant, about 1 minute.
  4. Toss in the shrimp, seasoning with salt and pepper. Cook until they turn pink, around 2-3 minutes per side.
  5. Stir in the lemon zest, lemon juice, and chicken broth; cook for an additional 2 minutes.
  6. Combine the cooked pasta with the shrimp mixture, ensuring everything is nicely coated with the sauce.
  7. Garnish with fresh parsley and serve hot, with grated Parmesan cheese on the side if desired.

Notes

For a creamier sauce, stir in a splash of heavy cream after adding the chicken broth. Enjoy with garlic bread or a fresh salad.
