Description
Delightful flaky puff pastries filled with fresh spinach, creamy cheeses, and aromatic herbs—a perfect Mediterranean treat for gatherings or quick weeknight meals.
Ingredients
- 2 sheets of puff pastry (thawed if frozen)
- 10 oz fresh spinach (roughly chopped) or 10 oz frozen spinach (thawed and well-drained)
- 4 oz cream cheese (softened)
- 4 oz feta cheese (crumbled)
- 1 small onion (finely chopped)
- 2 cloves garlic (minced)
- 1 tbsp olive oil
- 1 tbsp finely chopped fresh dill or parsley (or 1 tsp dried oregano)
- Salt and freshly ground black pepper (to taste)
- 1 large egg (beaten for egg wash)
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a skillet over medium heat, warm the olive oil. Add the chopped onion and sauté until it becomes translucent.
- Stir in the minced garlic and cook for another 30-60 seconds until fragrant.
- Add the spinach, cooking for about 2-3 minutes until it wilts. Once done, allow the mixture to cool and squeeze out any excess moisture.
- In a large bowl, mix the cooled spinach, cream cheese, feta, herbs, salt, and pepper until well combined.
- Roll out the puff pastry sheets and cut them into squares, approximately 4×4 inches.
- Place 1-2 tablespoons of filling onto each square, then fold and seal the edges tightly.
- Brush the tops with the beaten egg and arrange them on your prepared baking sheet.
- Bake for 15-20 minutes or until the pastries are golden brown.
- Once out of the oven, let them rest for 3-5 minutes before serving. Enjoy!
Notes
Serve warm with tzatziki or marinara sauce for dipping. Can be frozen unbaked for up to 3 months.
