Description

Delightful banana muffins swirled with cinnamon for a comforting treat perfect for any time of day.


Ingredients

  • 2 cups All-Purpose Flour
  • 1 cup Brown Sugar
  • 1 teaspoon Ground Cinnamon
  • 1 teaspoon Baking Soda
  • 1/2 teaspoon Salt
  • 3 medium Ripe Bananas
  • 2 large Eggs
  • 1 teaspoon Vanilla Extract
  • 1/2 cup Chopped Walnuts (optional)
  • 1/2 cup Butter, melted
  • 1/4 cup Brown Sugar and Cinnamon Mixture (for the swirl)


Instructions

  1. Preheat your oven to 350°F (175°C) and prepare your muffin tin with paper liners or a light dusting of grease.
  2. Mash your ripe bananas in a large bowl until smooth and creamy.
  3. In another bowl, mix together the flour, baking soda, salt, cinnamon, and brown sugar until combined.
  4. Gently add the mashed bananas, eggs, melted butter, and vanilla to the dry mix. Stir until just combined.
  5. In a small bowl, blend the remaining brown sugar and cinnamon for the swirl.
  6. Fill half of the muffin tin with batter, sprinkle a layer of the cinnamon-sugar mixture on top, then layer the remaining batter and top with more cinnamon-sugar mix.
  7. Bake for 18-20 minutes, or until a toothpick comes out clean.
  8. Let the muffins cool in the tin before transferring them to a wire rack.

Notes

For a sweeter option, substitute walnuts with chocolate chips. Store muffins in an airtight container or freeze for long-term storage.
