Delightful banana muffins swirled with cinnamon for a comforting treat perfect for any time of day.
Ingredients
- 2 cups All-Purpose Flour
- 1 cup Brown Sugar
- 1 teaspoon Ground Cinnamon
- 1 teaspoon Baking Soda
- 1/2 teaspoon Salt
- 3 medium Ripe Bananas
- 2 large Eggs
- 1 teaspoon Vanilla Extract
- 1/2 cup Chopped Walnuts (optional)
- 1/2 cup Butter, melted
- 1/4 cup Brown Sugar and Cinnamon Mixture (for the swirl)
Instructions
- Preheat your oven to 350°F (175°C) and prepare your muffin tin with paper liners or a light dusting of grease.
- Mash your ripe bananas in a large bowl until smooth and creamy.
- In another bowl, mix together the flour, baking soda, salt, cinnamon, and brown sugar until combined.
- Gently add the mashed bananas, eggs, melted butter, and vanilla to the dry mix. Stir until just combined.
- In a small bowl, blend the remaining brown sugar and cinnamon for the swirl.
- Fill half of the muffin tin with batter, sprinkle a layer of the cinnamon-sugar mixture on top, then layer the remaining batter and top with more cinnamon-sugar mix.
- Bake for 18-20 minutes, or until a toothpick comes out clean.
- Let the muffins cool in the tin before transferring them to a wire rack.
Notes
For a sweeter option, substitute walnuts with chocolate chips. Store muffins in an airtight container or freeze for long-term storage.
