Description
A delicious and easy one-pan meal featuring succulent chicken breasts marinated in balsamic vinegar, paired with cherry tomatoes and broccoli.
Ingredients
- 4 boneless, skinless chicken breasts
- 1/2 cup balsamic vinegar
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- Salt and pepper, to taste
- 1 cup cherry tomatoes
- 1 cup broccoli florets
Instructions
- Preheat your oven to 400°F (200°C).
- In a small bowl, whisk together the balsamic vinegar, olive oil, minced garlic, dried oregano, salt, and pepper.
- Arrange the chicken breasts in a large baking dish, then pour the balsamic mixture over the top.
- Scatter the cherry tomatoes and broccoli florets around the chicken in the baking dish.
- Bake for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
- Serve warm and enjoy!
Notes
For better flavor, marinate the chicken for at least 30 minutes or overnight. This dish can be served with quinoa or rice.
