Description

A quick and easy one-pot pasta dish with creamy garlic sauce, perfect for busy weeknights.


Ingredients

  • 8 oz pasta (any type — spaghetti, penne, fusilli)
  • 4 cloves garlic, minced
  • 2 cups milk (whole, oat, or soy)
  • 1 cup Parmesan cheese, grated
  • Salt and freshly ground black pepper, to taste
  • 1 tablespoon olive oil
  • Fresh parsley, chopped (optional garnish)


Instructions

  1. Warm a large pot or deep skillet over medium heat. Add olive oil.
  2. Add minced garlic and sauté for 30-60 seconds until fragrant.
  3. Pour in milk and stir in the dry pasta, ensuring it’s submerged.
  4. Bring to a gentle boil, then reduce heat to a simmer.
  5. Simmer uncovered, stirring every 2-3 minutes until pasta is tender and liquid has thickened, about 10-15 minutes.
  6. Remove from heat and stir in grated Parmesan until melted and smooth.
  7. Season with salt and pepper, garnish with parsley, and serve warm.

Notes

For nuttier flavor, swap half the Parmesan for Pecorino Romano. You can also add broth for more richness.
