Ingredients

  • 4 salmon fillets (approximately 6 ounces each)
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup fresh or canned pineapple, diced and well-drained
  • 1/4 cup packed light brown sugar
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon minced garlic
  • 1/2 teaspoon grated fresh ginger (optional)
  • 1 tablespoon fresh parsley, chopped (for garnish)


Instructions

  1. Preheat your oven to 400°F (200°C) and lightly grease a baking dish.
  2. In a small bowl, whisk together the brown sugar, soy sauce, rice vinegar, minced garlic, and optional grated ginger to create a luscious glaze.
  3. Pat the salmon fillets dry and rub each one with olive oil, then season with salt and black pepper.
  4. Arrange the salmon skin-side down in the prepared baking dish. Spoon about two-thirds of the glaze over each fillet and scatter the diced pineapple around.
  5. Bake in the oven for 12 to 15 minutes, or until the salmon is opaque and flakes easily with a fork. For a delightful caramelization, broil for an additional 1 to 2 minutes.
  6. Allow the salmon to rest for 5 minutes before serving. Garnish with fresh chopped parsley and drizzle with the pan juices and pineapple.

Notes

For a lighter option, consider using low-sodium soy sauce. This dish can also be grilled for a smoky flavor.
