Description

A comforting and creamy chicken casserole with buttery Ritz cracker topping, perfect for busy evenings or potlucks.


Ingredients

  • 4 cups cooked, cubed chicken breasts
  • 1 cup sour cream
  • 1 (10.5 oz) can condensed cream of chicken soup
  • 1/2 cup melted butter
  • 2 tablespoons poppy seeds
  • 1 cup crushed Ritz crackers
  • Optional: 2 cups cooked white rice


Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. In a large bowl, mix the chicken, sour cream, cream of chicken soup, and melted butter (reserve 1 tablespoon for topping). Stir in the poppy seeds.
  3. If using rice, fold it into the mixture.
  4. Transfer to the prepared baking dish and spread evenly.
  5. Mix the crushed crackers with the reserved butter and sprinkle over the casserole.
  6. Bake uncovered for 30–35 minutes, until bubbly and golden. Tent with foil if browning too quickly.
  7. Let rest for 5 minutes before serving.

Notes

Use rotisserie chicken for a quicker preparation. Feel free to substitute ingredients based on dietary needs.
