Description

A warm, lightly spiced pumpkin cottage cheese bake that’s creamy, nutritious, and perfect for breakfast, snacks, or dessert.


Ingredients

  • 1 cup pumpkin puree
  • 1 cup cottage cheese
  • 1/2 cup rolled oats
  • 1/2 cup sweetener (honey or maple syrup)
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon fine salt
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • Optional topping: 2–3 tablespoons chopped nuts or mixed seeds


Instructions

  1. Preheat the oven to 350°F (175°C) and grease an 8×8-inch baking dish.
  2. In a large bowl, combine pumpkin puree, cottage cheese, rolled oats, sweetener, cinnamon, nutmeg, and salt.
  3. Stir until evenly mixed.
  4. Beat in the eggs and vanilla extract until smooth.
  5. Pour the mixture into the prepared dish and smooth the top.
  6. Optional: Sprinkle chopped nuts or seeds on top.
  7. Bake for 30–35 minutes until the center is set and edges are lightly golden.
  8. Cool for 10–15 minutes before slicing. Serve warm or at room temperature.

Notes

For a creamier texture, pulse cottage cheese in a blender. Refrigerate for up to 4 days. Can be frozen for up to 2 months.
